Well I made it through week one! I lost 4.6 lbs. That was a little discouraging. I thought the first week I would have lost more. I only earned 7 activity points this past week. My goal this next week is to be more active and earn 20 activity points. I’m not one to be active… at all..so I plan on doing more walking and simply play with the kids outside (baseball, soccer, football…) I had a really busy weekend and didn’t keep track of my points like I should have. I’m disappointed in myself for that but I am not going to let it happen again! One thing I am changing is to drink less coke! I drink anywhere from 3-5 maybe six cans of Diet Coke or Diet Dr. Pepper a day. (awful I know!) To go along with that I have another goal of drinking 100 oz of water a day. This is very doable assuming I cut way back on the coke intake. I am starting to look more into Weight Watcher recipes. Can anyone share your favorite quick easy Weight Watchers lunch?
This is what I have been eating,… a ham or turkey sandwich and some carrots and mushrooms.
2 pieces of Home Pride bread (4 points)
8 pieces of ham (2 points)
5 sweet pickles (1 points)
1 T light mayo (1 points)
=8 Points Plus
The carrots and mushrooms are 0 points!

When I have sandwiches for lunch I swap out the mayo & use a Laughing Cow Swiss cheese wedge. Only 1 pt & enough to spread on both pieces of bread.

Oh my oh my, that sounds really good. I didn’t realize that Laughing Cow Swiss cheese wedge was only 1 point!!!! I had a sandwich yesterday and I told my husband that I NEEDED swiss on it, it’s like you were reading my mind. How funny. Thank you for the idea.

Here is one of my favorite WW recipes. I am not real familiar with the new point system, so this points may be a bit different. But my family loves Mexican food and this is so filling too!
10 – 6″ fat free flour tortillas, halved
3 cups cooked cubed chicken
1 cup frozen corn
1 onion chopped
1/2 green pepper, chopped
1 can(14 1/2 oz) stewed tomatoes
1 – 10 oz can diced tomatoes and green chilies
1 cup shredded reduced fat cheese
Preheat oven to 350º. Spray 9×13 pan. Line pan with half the tortillas. Layer chicken, corn, onion, pepper and stewed tomatoes. Cover with remaining tortillas. Pour tomatoes and green chilies over top. cover with foil and bake until heated through – 30 minutes. Uncover and sprinkle with cheese. Bake uncovered until cheese is melted, about 10 min longer.
Can serve with fat free sour cream and salsa.
6 serving, 5 points each.
