I like a ham and egg quiche near the holidays. I haven;t yet used a slow cooker for a breakfast meal, but I would like to try it. I like also a BLT salad: 110 oz. ala dente mini Farfalle pasta, 4 cups mayonnaise, 2.5 cups sour cream, 6 oz. peas, 9 oz. chopped celery, 11.5 oz. real bacon bits, 22 oz. chopped tomato (roma), 12.5 oz. lettuce. Mix until consistent. serve over medium crusted toast, or crackers. If you want a kick, add a jalapeno on top of each sandwich.

I tend to make more for breakfast during the holidays. I have more time to make them as I am a teacher and have the same times off as my children. I also have family visiting so I like to make them a special breakfast. I like to make french toast, eggs and sometimes quiches. I have made a breakfast burrito filler in my crock pot so everyone can take as much as they can.

Instead we sometimes have a breakfast for dinner meal (pancakes, bacon, eggs, and sometimes french toast [my favorite]). I think it would be interesting to cook breakfast in the crock pot though (whether for an actual breakfast or a breakfast for dinner meal) because crock pots are such a time saver!

I LOVE mt crock pot porridge! I get all the basics from Bulk Barn – bringing along my own measuring cups and spoons to only get exactly what I need. Fill up my crock pot, and everyone wakes up to amazing porridge for breakfast. I make it alone and like the porridge for lunch or supper, or just a snack. One cup keeps me satisfied for 4 hours! Here it is if you’d like to try it:

Set it all up the night before, plug it in, and wake up to ‘instant’ home-cooked goodness. Spice up the porridge with fresh or dried berries (I love dates, dried cherries, and cranberries), flax seed, wheat germ and/or bee pollen. I also find it a quick and satisfying lunch or supper as well. And remember, porridge lowers cholesterol substantially.

    Ingredients:
    ½ cup / 125 ml. cracked wheat
    1-1/2 / 360 ml. steel-cut oats
    ½ cup / 125 ml. rye flakes
    ¼ cup / 60 ml wheat germ
    ½ cup / 125 ml raisins
    ½ cup / 125 ml chopped dates
    1 Tbsn / 15 ml best-quality bourbon vanilla
    1-1/2 tsp / 7.5 ml vanilla
6-1/2 cups / 1.5 L water, or any combination of liquids including: rice milk, soy milk, almond milk goat’s milk, and / or water to equal 6-1/2 cups / 1.5 L
    Pinch of nutmeg

ADD any additional dried fruit or unsalted nuts you may like to this dish. I also like to add honey or maple syrup so it needs no sweetening when it is ready!

    Preparation:

    1. Place all ingredients into a 3-quart-or-greater crock pot.
    2. Stir well to combine all ingredients and cover
    3. Set on lowest cooking temperature and cook overnight. If your crock pot cooking time is set by length of cooking time, set for the longest cooking time and lowest heat.
    4. Spoon into cereal bowls in the morning and serve hot!
    5. Can add milk, honey or sugar, fresh fruit – whatever you choose.
    6. Try unsweetened applesauce as a sweetener

That would be great way to give kids healthy breakfast when we are so busy getting everyone ready.

I do a dry rub of cumin, cayenne pepper, brown sugar, garlic powder, onion powder, chili powder, paprika, salt, and pepper. Then fold the rack of ribs into the crockpot and cover with white wine and water or a beef stock.

I’m going to google some recipes now though! lol During the Holidays I love to bake muffins for my kids for breakfast, and also cook things like omelets and hash browns. On Christmas morning I always make my kids pancakes shaped like reindeer and let them add whip cream and sugar/cinnamon mix 🙂
