A recipe that you are proud of? (We’ll post these recipes separately for everyone to see!)

Joy:
You’re going to laugh but it’s my famous chocolate chip cookie recipe on the back of the Toll House Morsels package! It seems like I  get those babies right every time!

Nik:
Noodle Doodles/Haystacks/Birds Nests. We usually make these around the holidays.

Erin:
Pork Wellington with roasted brussels sprouts and asparagus. YUM.

    Corn Chowder
    1 pkg. bacon
    ½ – 1 onion, chopped
    3 large potatoes
    water for boiling potatoes
    1 t – 1 T sage ( I used dried)
    2 bay leafs
    3 Tbsp. flour ( or more)
    2 cups coffee mate (the powder creamer, generic works fine)
    2 cups shredded cheddar cheese
    salt and pepper
    2-3 cans corn, drained
    Start cooking bacon, I find it easiest to cut bacon in to pieces then toss into a deep pot (a pot big enough to make the chowder in) and just keep stiring it, it will break apart and cook up. As bacon is cooking cut potatoes in bite size pieces or smaller (you don’t have to peel them if you don’t want to) and put in another pot, cover with water, add sage and bay leafs. Also have your tea kettle on, you may need more water and you need it to be very hot. Boil until done. When bacon is done, get out with slotted spoon and put on paper towel. Keep about 2-3 Tablespoons of bacon grease in pot (sometimes more) add chopped onions and cook until done. When onions are done add the flour and stir, let cook for a few minutes, (I use about twice as much flour because I like it thicker) then the potatoes, with water and sage and bay leafs to onions. Stir. Add more water from tea kettle if needed (I usually do add at least a cup or 2) Add coffee mate slowly so it doesn’t clump. Add corn, salt and pepper. Stir. If you want it thicker at this point you can mix corn startch and water and add into chowder stiring as you add it. (this way if you add too much water it’s not a big deal) Add bacon back into chowder. Add in the cheese and stir until melted. Try to get out the bay leaf. Makes enough to feed 10 (at least it seems like it). When I double it I also just use 1 package of bacon. Freezes really well. Favorite recipe.
