Sour Cream Noodle Bake – The Kids Did It!

Dinners are hard at my house. I have to admit it’s kinda my fault too; I’m a really picky eater. Unfortunately, I’ve passed this lovely trait on to my eight year old as well. I’m glad that my hubby will eat just about anything I put in front of him, as will my one year old, so far. So finding something that everyone (or should I say my daughter and I) can agree on can be a little tricky. I think I got lucky with this one!

The end result of this recipe is very similar to what my mom calls “skillet lasagna”, which was a favorite of mine growing up. I found this casserole style recipe on Pinterest from the Pioneer Woman and tried it immediately! So glad that I did because it has become a favorite in my house! I usually serve this with a big tossed salad and chunk of crusty French bread.

**Update** Amanda tried this recipe and it was sooooooooooooo good! Both the kids ate well that night!

Sour Cream Noodle Bake
Author: Megan
Serves: 6-8
Ingredients
  • 1 ¼ lb ground beef
  • 1 15oz can tomato sauce
  • ½ tsp salt
  • Freshly ground black pepper (not a big fan, I skipped it)
  • 8oz of egg noodles
  • ½ cup sour cream
  • 1 ¼ cup small curd cottage cheese
  • ½ cup sliced green onion (more or less to taste)
  • 1 cup grated sharp cheddar cheese
Instructions
  1. Preheat oven to 350 degrees
  2. Brown the ground beef in a skillet, drain
  3. Stir in tomato sauce, salt and some pepper
  4. Reduce temperature and simmer while you prepare everything else
  5. Cook the noodles, drain and set aside
  6. In a large bowl, combine the sour cream and cottage cheese. Add more pepper if you want
  7. Stir noodles and onions into cheese mixture
  8. Put half the noodle mixture into the bottom of an 8×8 baking dish
  9. Pour about half of the meat mixture on top of that, spreading it out so it covers the noodles
  10. Add about half of the grated cheese
  11. Repeat these layers
  12. Cover (leave uncovered if you want the cheese to be more crusty, my family likes it melty) and
  13. Bake for 20 minutes
