Toddlers are notoriously picky eaters. Mine is no exception. Sometimes, dinners are composed of three pickle spears, a half tube of yogurt, six raisins that met her careful inspection, and an old graham cracker that she found in the couch cushion. On those tough days, I am just glad she ate SOMETHING, let alone something HEALTHY. However, I am always interested in new ways to sneak vegetable servings into things she LIKES to eat. The go-tos are chicken nuggets, frozen waffles, and of course, PIZZA – none of which are particularly nutritious. That’s why I was so excited to try CAULIPOWER! CAULIPOWER is a pizza crust that has the first ingredient is cauliflower, offers tons of health benefits, low-carb/sugar, and is gluten-free. Right now, it comes in four varieties – Veggie, Three-Cheese, Margherita, and crust-only.
I know what you are thinking – cauliflower is not your favorite veggie. To be honest, I doubt it is at the top of anyone’s “favorites” list, but it should be! When I opened the CAULIPOWER package and started reading, I couldn’t believe how healthy cauliflower is and how easy it is to incorporate into your diet through PIZZA! Cauliflower has antioxidants, phytonutrients, omega-3, and nutrients that do everything from help fight cancer to Crohn’s Disease AND it is the first ingredient in every CAULIPOWER product.
Now for the big test – yes, CAULIPOWER is healthy, but does it taste good? Will my cauliflower-powered pizza taste like PIZZA? We popped the three-cheese and the veggie variety frozen pizzas into the oven with high expectations. My mom has a health-restricted gluten-free diet and rarely gets to enjoy pizza, and I was recently diagnosed with gestational diabetes and traditional pizza has too much sugar. We were so excited to try food that worked with both of our restrictions and could sneak in some veggies for my little one.
The pizzas cooked quickly and evenly, making them an easy choice for an anytime meal. I was really worried about the texture – but the cauliflower crust had perfect crunch just like my go-to traditional thin crust pizza. The three-cheese variety was the biggest hit – especially with my picky toddler – but the veggie, although the toppings were a bit sparse, was flavorful and yummy, too! Next week, we are going to try the Margherita variety and doctor up the plain crust version with some yummy meats and ricotta cheese!
Honestly, the CAULIPOWER pizzas were truly was something I’d order at a restaurant for taste, not just health benefits. It is a GOOD PIZZA! CAULIPOWER has definitely earned its spot in my family’s meal planning rotation.
Simply put, CAULIPOWER was a big hit! My daughter had two pieces of the cheese pizza and a piece of the veggie pie too! My mom went on and on asking where she could purchase more because she was going to stock her special gluten-free freezer at her house! And I was able to take a deep breath, know I made a healthy meal for my family, and most importantly, one that they would eat and enjoy – all thanks to Caulipower! I can’t ask for more than a mom-win AND a pizza night. Now, if they could just figure out how to make me a cauliflower margarita, I’d be all set!
