Peeps Easter Cupcakes {Easy Centerpiece!}

I have to admit Easter is one of my favorite holidays when it comes to cookies, cupcakes, candy and desserts. All the pretty Spring colors and fun candy just make me super happy! Several years ago, in a Women’s World magazine, I saw an idea to top cupcakes with Peeps. Peeps cupcakes have since become a staple at our family Easter dinners. Such an easy idea really makes a big bang at any gathering and makes a beautiful and colorful centerpiece!

Peeps Cupcakes

Ingredients
  • 1 box cake mix, any flavor
  • 1 tub icing, I prefer white or a light color (the decorations show up better)
  • 24 Peeps
  • Green sprinkles or green sugar
Instructions
  1. Preheat your oven and follow the directions on the box of cake mix to make 24 cupcakes. Or follow your own recipe for homemade cake/cupcakes. I used white cake mix and used polka dot cupcake/muffin tin liners.
  2. Bake the cupcakes and let them cool completely.
  3. Once cool, frost (I used vanilla icing from a tub).
  4. Pour some green sprinkles or green sugar onto a paper plate.
  5. Roll the edges of each cupcake in the sprinkles, leaving the center top sprinkle free. This will make the Peep look like it’s sitting in grass.
  6. Finally, top each cupcake with a Peep.
  7. Voila! Simple, adorable and yummy!
