- Lemon pepper seasoning
- 1 red bed pepper
- 8 oz. smoked Gouda cheese
Instructions
- Preheat oven to 400 degrees.
- Cut into bell pepper, remove center and cut the pepper into bite size pieces.
- Cube (or shred) cheese.
- Lightly spray 9×13 baking pan with cooking spray.
- Lay chicken in pan.
- Generously sprinkle with lemon pepper seasoning.
- Toss pepper on top.
- Cover with cheese.
- Cover with foil and bake for 20-30 minutes until chicken is cooked through.
Notes
If you use whole chicken breasts, cook time may take closer to an hour. I highly recommend filleting it or cutting it into strips for a shorter cook time. This is a great meal for busy school nights and since it’s very easy to double (or triple) it‘s also great for larger get-togethers.
