Balsamic Roast Beef

My husband is a real meat and potatoes kind of guy. So anytime I can find a roast beef recipe, he’s game to try it! I found this one on addapinch.com and it’s one that my whole family enjoys, even the kiddos! For me, cooking big hunks of meat is easiest to do in my crock pot. I throw this together in the morning and it’s all ready to eat at dinnertime! Plus any leftovers that we might have make delicious sandwiches!!

Balsamic Roast Beef

Ingredients
  • 1 3-4lb boneless roast beef
  • 1 c beef broth
  • ½ c balsamic vinegar
  • 1TBSP Worcestershire sauce
  • 1 TBSP soy sauce
  • 1TBSP honey
  • ½ tsp red pepper flakes (I do not add this, my kids don’t like it)
  • 4 cloves garlic, chopped
Instructions
  1. Place beef into slow cooker.
  2. Mix all remaining ingredients in a 2 cup measuring cup.
  3. Pour over beef.
  4. Cook on Low for 6-8 hours or on High for 4. I prefer the low setting for the longer amount of time, personally.
  5. Once beef is done, remove from crock pot and pull apart a bit with forks.
  6. Pour about ½ cup of the juice over the meat and serve.
Notes
I also like to make the juice a bit more of a gravy. Use a fat separator on the juice and then pour it into a sauce pan. Over medium heat, simmer until the gravy has reduced by half. The balsamic flavor will be a bit stronger this way too.

    If I am placing frozen beef in the slow cooker, how many hours do I need to cook it for?

    I’m cooking this recipe right now! The balsamic vinegar was a bit overpowering before I cooked it so I modified the recipe just a tad to compensate for my own tastes. The results (before cooking) tasted amazing! 4 more hours until it is done cooking and the house already smells heavenly. Kudos for posting this recipe!
