Gouda Chicken is so Good-a

This recipe is new to me but it comes from my sister-in-law who has been making it for years. It is one of my brothers all time favorites! Simple, quick and full of juicy flavor it is fast become a favorite at my table too!

Gouda Chicken

Cook time: 30 mins
Total time: 45 mins
Serves: 4-6
Ingredients
  • Approx 2 lbs boneless, skinless chicken breast or tenderloin
  • Lemon pepper seasoning
  • 1 red bed pepper
  • 8 oz. smoked Gouda cheese
Instructions
  1. Preheat oven to 400 degrees.
  2. Cut into bell pepper, remove center and cut the pepper into bite size pieces.
  3. Cube (or shred) cheese.
  4. Lightly spray 9×13 baking pan with cooking spray.
  5. Lay chicken in pan.
  6. Generously sprinkle with lemon pepper seasoning.
  7. Toss pepper on top.
  8. Cover with cheese.
  9. Cover with foil and bake for 20-30 minutes until chicken is cooked through.
Notes
If you use whole chicken breasts, cook time may take closer to an hour. I highly recommend filleting it or cutting it into strips for a shorter cook time. This is a great meal for busy school nights and since it’s very easy to double (or triple) it‘s also great for larger get-togethers.
