While waiting in line to check out at the grocery store, I was randomly flipping through a recipe magazine. I’m not sure of its name but it had myrecipes.com on the front. I found a recipe that sounded good called Sloppy Joe Squares. Well, I’m cheap and I didn’t want to spend the $12 on the magazine so, after reading over the recipe, I decided to just remember the website and look it up when I got home. When I got home, I ran to my computer only to find that the recipe wasn’t one that was listed on the site. Great! From what I remembered, the recipe was pretty simple so I decided to make my own version. Guess what? It was a success and my family loves it. It’s one that my picky eight year old asks for on a regular basis now. So here’s my version:
Ingredients
- 2 tubes of crescent rolls
- 1 ½-2 cups shredded cheddar cheese
- 1lb ground beef (I usually use closer to 1 ½ lbs, whatever is in the package I find at the grocery store)
- Salt and pepper
- A few good shakes of dried minced onion
- About 1 Tablespoon mustard
- ½ – 3/4 cup catsup
- 1 heaping teaspoon sweet pickle relish (sometimes I leave this out if I don’t have it handy)
- About ¼ cup brown sugar
Instructions
- Pre-heat the oven to 375.
- Lightly spray the bottom of a 9×13 baking dish.
- Unroll 1 crescent roll tube and lay it out on the bottom of the pan. Press the seams together so there are no holes and you may need to stretch it just a bit to get it to fit. Set it aside.
- Brown ground beef and drain. Put back into pan and salt and pepper to taste.
- Add onion, mustard, catsup and relish. You can vary the amount of the catsup depending on amount of meat; add enough to get a traditional Sloppy Joe consistency.
- Add the brown sugar. If you don’t like your Sloppy Joes sweet, don’t add as much sugar.
- Spread meat out on top of dough in the pan.
- Cover with the shredded cheese.
- Unroll the 2nd tube of crescent rolls and lay it across the top of the cheese, again, stretching slightly to make it fit.
- Put it in the oven and bake for 12-15 min, until top is golden brown.
- Serve and enjoy!
Notes
My hubby says the leftovers are pretty tasty the next day too! If you don’t like my version of Sloppy Joes, just use whatever you normally do for Sloppy Joes and try it that way! Or maybe try this recipe with taco meat instead of Sloppy Joe meat. I think I’m going to try that next!
